So on Sunday, I made a lasagna. However, I didn’t notice that I only had 11 lasagna noodles until I had made the sauce and it was too late to buy more noodles. So instead of a noodle, I trimmed a couple of corn tortillas to fit and used those. It seemed to work. I don’t think it would’ve worked if I’d replaced every noodle with a tortilla, though.
Not a whole lot else to report. Maybe Monday will be more exciting. . . .

Well, it tasted fine, it’s just not set up as a traditional lasagna is supposed to be. At least I now have a large number of leftovers.
It is possible to make lasagna with tortillas. They call it mexican lasagna. I have not made it from scratch before, but I have bought it frozen.
We had lasagna on Thursday.
That makes sense. What is a lasagna but alternating layers of breadlike stuff, sauce, and cheese? I don’t know that corn tortillas would have the structural integrity to hold a lasagna together, though wheat ones probably would.
